Healthy Meals To Go

One of the most common excuses for poor eating habits is “I don’t have time in the mornings for breakfast.” With that in mind, here is one solution. I am a huge believer in meal-prepping…if I’m being honest, my wife does most of it for both of us, but there are some recipes I’m capable of handling myself.

Here is one of my favorite breakfast tricks, so you can get a well-balanced breakfast and take it on the run. These are egg “muffins” that can be made as shown, or by substituting your own creative ingredients. The best part? You’ll have a week’s worth of breakfast in under 30 minutes!

Cooking Instructions:

  • Preheat oven to 350 degrees
  • Mix 12 Eggs with 1/4 Cup of Milk and ANY veggies and protein you want (I like mushroom, onion, and chopped up turkey sausage)
  • Portion liquid evenly into muffin baking trays
  • Bake for 25-30 minutes

Enjoy immediately or save them for when you’re on the go!
